Coconut Beet Bites

The secret ingredient in these delicious red velvet coconut bites? BEETS! These little bites make a better-for-you dessert or on the go snack that will satisfy your sweet tooth and fuel your day!

Ingredients

Servings   12   Serving Size   1 ball

  • 1/2 cup cooked beets
  • 1/2 cup plain, fat-free Greek yogurt
  • 2 tablespoons cocoa powder
  • 2 teaspoons maple syrup
  • 1/3 cup coconut flour
  • 1 teaspoon vanilla extract
  • 1 teaspoon orange zest
  • 1/4 cup unsweetened shredded coconut flakes

Directions

  1. Add all of the ingredients to a food processor except for the coconut flakes.
  2. Use a cookie scoop to portion out the batter. Roll into balls and freeze for 1 hour until firm.
  3. Remove from the freezer and coat with unsweetened coconut shreds. Store in the fridge and enjoy.
