Ingredients

Servings   2   Serving Size   1 burger

  • 1 large onion (thinly sliced)
  • 1 8oz package plant-based burgers (2 patties)
  • 4 thin tomato slices
  • 1/4 to 1/2 avocado (sliced)
  • 2 to 4 slices grilled eggplant (optional)
  • 2 tablespoons barbeque sauce
  • 2 whole-grain hamburger buns, split and lightly toasted

  1. Liberally mist a skillet with nonstick oil spray and warm over medium-high heat. Add sliced onion to the hot skillet and sauté for 17 to 20 minutes, until onion is golden brown and caramelized, stirring occasionally. If onion slices become dry at any point, mist with extra oil spray or add droplets of water to keep moist. Season with a pinch of kosher salt and ground black pepper to taste and transfer to plate.
  2. Reapply oil spray to hot skillet. Add plant-based burger patties and cook according to package directions. Transfer patties to buns and layer with tomatoes, optional grilled or roasted eggplant, sliced avocado, generous amount of caramelized onions and barbeque sauce.
